Why we are taking a trip to South Korea?
South Korea has always been one of the countries that I wanted to visit since I had a Korean best friend. Not only is it a beautiful country with some breath-taking scenery, but the culture and history provide a vast learning experience.
Modern culture includes K-Pop (short for Korean Pop – a genre of modern music influenced by numerous world-wide styles and genres) and Korean dramas. One of my most loved Korean Drama is Boys over Flowers. Who would not want to date Lee Min Ho; he is just a gorgeous face to look at. The music industry especially the K-Pop scene in some aspectsdisplay more talent than our western main stream music.Having not only girl groups, such as BlackPink, Red Velvet and Girls Generations with one of my all-time favorite songsGee Gee. And then you have the boy groups such as super junior and of course one of the most famous ones they have is BTS (“Bulletproof Boy Scouts” or “Beyond the Scene” take your choice). BTS has made K-Pop even more popular in the world – putting Korea even more on the music map.
A Korean Feast
Rice Rolls: Gimbap
Gimbap Is a Korean rice roll made from Gim, which is dried seaweed in sheets. Bap is cooked or steamed rice. Gimbap can contain many other ingredients, such as meat or vegetables. These rolls are so versatile – you can put in it whatever you want.
This rice roll is one of the most popular picnic foods in Korea, since it’s easy to transport and they do not need to be kept warm. They call it the Korean version of a sandwich. You can find it anywhere – at a 24 hour convenience store or at a fancy Korean wedding. This food is both fancy and casual.
In the beginning I thought that Gimbap is the Korean version of Sushi, but it is totally different. Even though both Gimbapand sushi use short grain rice, that is all they have alike. Sushi is made with rice seasoned with rice vinegar, which contains a lot of sugar. Whereas, Gimbap is prepared with sesame oil, sesame seeds and salt. Japanese sushi nearly always uses raw ingredients, such as raw fish. Gimbap uses cooked or preserved ingredients such as canned tuna or kimchi. There are so many kinds of Gimbap, it is hard to name them.
Don’t forget to use your Gimbal, which is your bamboo mat to make the rolls and to seal them.
We made Tuna Gimbap with our very own Mayonnaise. Here is the recipe:
Mayonnaise
1 TEASPOON OF SOJA SOUCE
1/2 TEASPOON KOREAN CHILI PASTE (Gochujang Sauce)
1/2 TEASPOSON KOREAN PEAR ESSENCE
1 TABLESPOON RICE ESSIG
1 EGG YOLK
The oil you put to your taste – start with small amounts but no more then 1 tablespoon.

Bulgogi (Korean grilled beef):
Bulgogi is probably the most popular Korean dish around the world. The word bulgogi comes from Korean words Bul (fire) gogi(meat).
In ancient times bulgogi was meant to be eaten by the king mostly during Joseon Dynasty. This dish is thought to date back to the Gorgryeo era (57 BC to about 700 AD). Even though through history, it changed names, the preparation was kept the same. Koreans eat Bulgogi any time of the year. This dish is very healthy since it contains a lot of vegetables and meat. The longest part of preparing this dish is marinating the meat.

Cucumber soup : Oi Naengguk
In Korea, its tradition to always eat a soup with your meal. So,we wanted to make the meal as traditional as we could. But since it was the hottest day of the year, I was not so keen on hot soup. We decided to make a nice cold cucumber soup.

Fried Zucchini: Hobak Bokkeum

Hobak Bokkeum is another side dish. Best recommend to be eaten with rice or Kimchi since it’s a bit salty.
